In Nimaima, Colombia, in the year of 1958 at the age of 17, along with my great-grandparents Elena and Eusebio, who taught us day by day to love and preserve our land, there was La Finca El Reposo in Tierra Calida, a place where the diversity of crops was an astonishing reality. From fruit trees like the hartón plantain and the colicero, to the valuable variety of Arabica coffee, this farm offered a wide range of products that delighted all its visitors.

The Arabica coffee, in particular, was a treasure for the farm. It not only provided an excellent economic yield but also required dedicated specialists for its care before the harvest. After a meticulous collection process, the crucial moment arrived: the depulping of the coffee.
Using a manual depulping machine, the coffee beans fell into water for a perfect wash. This operation was repeated several times, ensuring the cleanliness and quality of the coffee. Then came the drying of the product. The beans were spread out on mats in the sun, strategically placed in the corridors of the house and the patios.

During this process, the beans were raked several times a day, guaranteeing optimal drying. Part of the dry coffee was destined for sale, while a portion was reserved for home consumption. Before all this, a careful selection of lower quality coffee beans, known as pasilla, was performed to obtain the best coffee, known as parchment.

The next step was the roasting of the coffee, a stage full of captivating flavors and aromas. In large cauldrons, the coffee was carefully roasted over fire, constantly moving with a spatula. The goal was to prevent burning and achieve the perfect roast. Once roasted, it was left to cool before being ground. The aroma of the coffee traveled to every corner of the farm, flooding the senses of all who experienced it.

In the mornings, it was a delight to savor a steaming and delicious coffee, served in pewter cups, which we enjoyed while seated in the corridors of our beautiful farm. The smooth and comforting flavor of freshly prepared coffee awakened the senses and marked the beginning of a day full of energy and satisfaction.

This is where my memory of La Finca El Reposo ends. Now, I'm off to enjoy a pleasant and refreshing coffee, transporting myself back to those wonderful moments when the aroma of coffee filled the air and the magic of the farm wrapped me in its charm.
